2 – 16 oz. Packages of frozen mixed vegetables i.e. Corn, Snow Peas, Broccoli or your favorite medley
½ Stick of Butter
½ Cup Cooking Sherry
2 Tbsp. “Lip Smackin’ Power Packin’ Medium Rub”
½ Bunch of Cilantro
Empty frozen vegetables into aluminum foil loaf pan, pour in cooking sherry, mix in 2 Tbsp. of Rub and top with ½ stick of butter sliced into 6 – 8 small slices evenly distributed across the top of the vegetables. Place pan in smoker at 225 – 250 degrees for 15 minutes then lightly mix again to distribute both the butter and smoke flavor. Return pan to smoker for another 5 – 15 minutes depending on your taste for smoke flavor.
After you remove the mixture from the smoker mix in chopped cilantro and serve.
This recipe is especially good when a 16 oz. medley of frozen sweet peppers and a 16 oz. medley of corn, snow peas and broccoli are combined.
