Mama's Corn & Black Bean Salsa

If you can mix this up the day before you expect to serve it. The flavors will meld together much better after a night of chillin' in the refrigerator.

5 Ripe Roma or Plum tomatoes - small dice
1 Small onion - small dice
1 can whole corn - drained
1 can black beans - rinsed to remove the murky water
1/2 bunch cilantro
Fresh Minced garlic to taste (we like a heavy teaspoon)
2 Tablespoons red wine vinegar
2 Tablespoons EVOO (extra virgin olive oil)

Salt & Pepper to taste
