1 – Large 96 oz. Can of pork & beans
1 cup salsa
1 cup bbq sauce
1 cup packed brown sugar
¼ cup “Taste Temptin’ Purt’near Sinnin’ BBQ Rub”
1 lb bacon
1 lb chopped brisket burnt ends
2 large onions chopped
1 large green bell pepper chopped
1 large red bell pepper chopped
1 bunch parsley chopped
Obviously, this is going to make quite a lot of plate fillin’ side dish eatin’. This is one of those dishes like chili or other stews that makes a great warm up in the microwave. It’s great for those days outside for the picnic or when you’re looking for that hearty winter dish.
First cut bacon into 4 – 5 chucks per slice. Brown bacon in large skillet until almost done then add the chopped onion and reduce heat and cover stirring occasionally until onion is translucent. Once bacon and onion are done, drain off excessive bacon drippings and mix in a large aluminum steam pan with the industrial sized can of pork & beans.
Combine the rest of the ingredients and mix thoroughly. Be careful not to mix to hard as you can break up the beans. Once the mixture is complete place uncovered in smoker at 225 – 250 for two hours stirring every 30 minutes to incorporate more smoke flavor.

We competed in the Frisco, CO contest in August of 2001. We watched in amazement as one 9 year old boy ate 8 – 4 oz. servings of this dish. That’s a Quart! After the 3rd serving we started giving it to him free for the entertainment value. He stood in the middle of the street and did the “Mmmmm this is gooood dance.” We are not sure to this day but believe that he may have been looking forward to the effects that this dish might possibly create in the next few hours. Regardless, it was a sure thing that kids do like this dish.
